Our mildly tart Montmorency Cherries are pureed through a large screen to provide a generous amount of whole cherry pieces. The puree is cooked with the juice of steamed apples to provide the pectin to solidify the cherry puree into a jam. Sugar is carefully portioned to preserve the delicate tart flavor.
